Organic Chicken Cacciatore 

This organic chicken cacciatore recipe is one of my favorite recipes that I make on a regular basis. It is so easy to make and super delicious. I use all organic ingredients. The best part about this recipe is that all of the ingredients are easy to find and are usually on hand in a standard household kitchen. I pair this with either quinoa, brown rice, spaghetti squash, or gluten free spaghetti along with an outrageous portion of vegetables. I hope you enjoy it as much as my family and I do!

Cook Time: 35 minutes

Total Time: 40 minutes

Yield: 3-4 servings

Chicken Cacciatore

Ingredients

  • 2 pounds of boneless skinless chicken thighs (about 6-8 pieces)
  • 1-2 Tablespoon extra virgin olive oil
  • 1 onion, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 red,yellow, or orange pepper, thinly sliced
  • 2 minced cloves of garlic
  • 1 can of tomato sauce
  • 1 can of diced tomatoes
  • 2 Tablespoons of tomato paste
  • 1/2 teaspoon of onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Himalayan salt or sea salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large saucepan on medium heat. Add a tablespoon of olive oil. Once heated, add the onions, green and red peppers, and cook until soft for about 5 minutes. Add the garlic and cook for 1 minute. Then add chicken and cook for about 7-9 minutes until all pink is gone. Next add the tomato sauce, tomato paste and spices. Bring to a boil and then bring to a simmer for another 15 minutes.

Notes

*Feel free to add more sauce and tomato paste depending on how saucy and thick you want it

*you can add any color of pepper you like or if you don’t like peppers you can just do this with onions

*you can also add extra onions or peppers as well

*Feel free to also adjust any spice

*This recipe doubles up really well

  1. This is not a bad thing because Joseph s is a fine place to get food, but it did mean I didn t have the chicken cacciatore recipe to recreate at home .
